Fossa - Sake Kasu - 75%

A very unusual pairing of dark chocolate and kasu, or the lees of sake making. A blend of both red and white kasu from two noted distilleries is used here to give a rich, umami backdrop to this excellent bar. It also adds an intriguing fruit note with aromatics of fine sake. Very cool bar.
